Head Baker Application Form
The Danish Bakery is a successful, award winning bakery based in Cardiff. Established in 2015, the bakery has three retail outlets, and operates from a purpose built modern bakery in the east of Cardiff. We are looking for a passionate, expert Head Baker to lead our artisan bakery team. As the "engine" of our business, you will oversee the production of high-quality Scandinavian-style breads and pastries, inspiring a team of bakers and apprentices to deliver excellence every day.
The Role at a Glance
Team: Bakery
Reports to: Head of Operations
Direct Reports: Senior Bakers, Bakers, Assistant Bakers and Apprentices
Working Hours: between 2.00am (12.00am on Saturday) and 10.00am
Hours: 40 hours per week, including weekends (5 days per week)
Salary range: £30k - £35k
Location: On-site at the Bakery HQ, Riverbridge Business Park, Cardiff, CF23 9FP
Key Responsibilities
Operational Excellence: Lead day-to-day operations, including inventory management, staffing, and ensuring high standards of cleanliness and food safety.
Team Leadership: Act as a mentor and coach to your team; manage recruitment, training, rotas, and performance reviews.
Quality & Innovation: Ensure consistent product quality and lead the development of new seasonal product ranges and menu items.
Business Management: Manage stock levels, supplier relationships, and production costs to meet wage, wastage, and profit targets.
Safety & Compliance: Maintain impeccable standards for Food Hygiene (Level 3), Health & Safety, and allergen documentation.
Who You Are
The Expert: You are an experienced baker skilled in mixing, hand-moulding, lamination, and long fermentation techniques.
The Leader: You have a proven track record of managing a bakery team and are passionate about developing the next generation of talent through our apprenticeship academy.
The Strategist: You are comfortable with targets, cost-control, and problem-solving in a fast-paced environment.
