Brødkrumme Suggestions

Breadcrumbs are such a versatile ingredient and can be used for savoury and sweet dishes alike. We’ve compiled some suggestions for you to try - Savoury, Stuffing and Sweet - as well as some recipes for your Christmas celebrations!

Savoury

Garlic Rosemary Brussels Sprouts

  • Preheat oven to 220°C. Place 1/4 cup olive oil, 4 cloves of minced garlic, 1 teaspoon of salt and 1/2 teaspoon of pepper in a small microwave safe bowl and microwave on high for 30 seconds.

  • Place Brussels sprouts in a roasting pan, toss with 3 tablespoons of the olive oil mixture and roast for 10 minutes.

  • Mix 1 cup breadcrumbs with 1-2 tablespoons minced fresh rosemary and the remaining oil mixture and sprinkle over the sprouts. Bake until the crumbs are browned and sprouts are tender (12-15 minutes). Serve immediately.

You can use dried rosemary instead of fresh; use 1-2 teaspoons and crush with pestle and mortar or with the back of a spoon. While this recipe uses Panko breadcrumbs we think using our Brødkrumme adds a lovely nutty flavour!

Crunchy Honey Glazed Butternut Squash

  • Preheat oven to 190°C. In a large saucepan heat 1/2 cup honey and 1/2 teaspoon dried thyme, stirring occasionally, over a low heat until fragrant (3-4 minutes).

  • In a large microwave safe dish combine the butternut squash (1 large squash - approx. 5lbs, peeled, halved, seeded and thinly sliced) and 3 tablespoons water. Cover and microwave on high until squash is tender (6-8 minutes), and drain. Add 1/4 cup olive oil, 1 teaspoon salt and 1 teaspoon pepper, toss to coat.

  • On a flat surface stack the squash slices. Arrange stacks on their sides in a greased 9 inch square baking dish (set baking dish on end to make stacking easier then return to flat once done). Drizzle 3 tablespoons honey mixture over squash.

  • Bake until squash is tender (45-50 minutes). Meanwhile in a small pan heat 2 tablespoons olive oil over medium heat. Add 1/2 cup breadcrumbs and toss together with 1/2 teaspoon thyme, 1/2 teaspoon salt and 1/2 teaspoon pepper. Cook and stir until breadcrumbs are golden brown (about 5 minutes). Sprinkle toasted breadcrumbs over baked squash, drizzle with more honey mixture if desired.

You could also use butter in place of the olive oil when toasting the breadcrumbs, or add in some toasted chopped nuts for an extra crunch! This dish could be made with sweet potatoes in place of the butternut squash, or a mixture of the two. This recipe uses Panko breadcrumbs but we think our Brødkrumme give a better flavour when combined with the squash!

Stuffing

Our breadcrumbs are perfect for using in stuffing, treat your friends and family to homemade stuffing this Christmas! Here are a few ideas, add ingredients to your taste.

Traditional Pork, Sage and Onion - classic stuffing!

  • Combine finely chopped, sautéed onion, fresh or dried sage, breadcrumbs and sausage meat (add an egg to combine if needed) and mix well.

  • Bake this mixture in a dish or roll into balls to cook.

  • Perfect with roast chicken, turkey or pork.

Sausage, apple and chestnut

  • Finely chop and sauté onion, grate or dice Bramley apple and cook. Once cooked combine these with sausage meat, cooked chestnuts, breadcrumbs and thyme.

  • Bake this mixture in a dish or roll into balls to cook.

  • Ideal with turkey or goose.

Sage and Onion (meat free)

  • Sauté finely chopped onion until soft and combine with breadcrumbs and fresh sage. Use vegetable stock or egg to bind the mixture. Add a little Marmite to the stock for extra umami.

  • Bake this mixture in a dish or roll into balls to cook.

  • Goes well with any vegetarian (or vegan if eggs omitted) roast.

Wild Mushroom and Chestnut

  • Sauté sliced chestnut mushrooms, finely chopped onions and garlic. Combine these with cooked chestnuts, thyme, oregano and breadcrumbs in a food processor and mix to your preferred texture. Bind using egg or stock.

  • Bake the mixture as balls.

  • Perfect for both meat and vegetarian/vegan roasts.

Apricot and Cranberry

  • Mix chopped and sautéd onions, breadcrumbs, chopped dried apricots, dried cranberries and your favourite herbs. You can also add orange zest for extra flavour. Combine using egg or stock.

  • Bake the mixture as balls.

  • Contrasts well with the flavours of roast turkey.

Top tips for stuffing:

  • Moisture is key - for baked stuffings use a good amount of liquid (egg, stock or milk) to help keep it moist.

  • Play with flavours - add crispy chopped bacon, a pinch of ground mace or even lemon zest!

  • Make it ahead - stuffing mixtures can be prepared in advance and frozen - either before or after cooking. Make sure you thaw and heat it properly.

Sweet

Many sweet dishes use breadcrumbs to create a delicious texture; a pleasing crunch in crumbles, a soft, rich base in puddings or a surprising element in cakes.

Dessert Ideas

Queen of Puddings
This traditional British dessert features a baked breadcrumb and custard base, which is then topped with a layer of jam and a fluffy meringue crown.

Bread Crumb Pudding
Often a way to use up stale bread, this dessert is made by soaking breadcrumbs in a custard mixture of milk, eggs, and sugar. It is baked until golden and can be flavoured with spices, raisins, or lemon zest.

Fruit Crumble
A baked dessert with layers of fruit (typically apples) and sweetened, buttery breadcrumbs. Add oats to the crumble mix for extra bite.

Pie or Cheesecake Crust
For an alternative to a biscuit based crust, breadcrumbs can be combined with melted butter and sugar to form a unique, crispy base for pies and cheesecakes.

Sweet Topping or Garnish
Toasted breadcrumbs, often mixed with butter and sugar, can be sprinkled over ice cream sundaes or other desserts to add a surprising crunch and texture. Add ground cinnamon or cardamom to the mix for a festive twist.

Breadcrumb Storage Tips

  • Freeze breadcrumbs in freezer friendly bags or airtight containers for long-term storage.

  • If you plan to store them for just a week or two, you can keep them in an airtight container on the counter or in the fridge.

  • Once defrosted do not refreeze, instead keep the remaining portion in the fridge and use within a few days.
